Tasting Notes
Aromas of spices and red fruit, particularly thyme, oregano and sour cherry. On the palate, this wine is delicate medium bodied, with the addition of some white pepper and bell pepper flavors. The finish is soft but still supported by some tannins.
Vineyard Notes
These Cabernet Franc grapes come from our estate vineyard (Mokelumne River AVA). This vineyard is the one that surrounds our tasting room and production facility. The vines are trained onto a VSP (vertical shoot position) trellis system. Pruning and shoot thinning were done to keep cluster counts in balance, leaves were pulled on the north side of the vine as the rows oriented east to west.
Winemaker Notes
Grapes were hand-picked in the morning and gently sorted and transferred to a temperature controlled stainless steel tank for a three day cold soak. Must was inoculated with yeast and fermentation was kept healthy with regular timed pump overs.
Aged in oak barrels, approximately 46% new. Both
French oak barrels were used. The composition of the wine is 100% Cabernet Franc from our Estate Grown vineyards.
