Tasting Notes
This deep garnet Cabernet Sauvignon is composed of complex aromas of blackberries, licorice, pepper, and vanilla. Full bodied and rich on the palate with echoing flavors combined with graham cracker and caramel from the oak. The finish is abundant in textural tannins yet smooth and velvety.
Vineyard Notes
These Cabernet Sauvignon grapes come from our estate vineyard (Mokelumne River AVA). This vineyard is the one that surrounds our tasting room and production facility. The vines are trained onto a VSP (vertical shoot position) trellis system. Pruning and shoot thinning were done to keep cluster counts in balance, leaves were pulled on the north side of the vine as the rows oriented east to west. Planted in 2014, Clone 7 (101 Concannon) on 5BB rootstock.
Winemaker Notes
Grapes were hand-picked in the morning and gently sorted and transferred to a temperature controlled stainless steel tank for a three day cold soak. Must was inoculated with yeast and fermentation was kept healthy with regular timed pump overs.
Aged in oak barrels, approximately 50% new, French oak barrels were used where the wine aged approximately 17 months. The composition of the wine is 88% Cabernet Sauvignon, 5% Cabernet Franc and 5% Petit Verdot, 2% Petite Sirah. All of these are from our Estate Grown vineyards.
