Tasting Notes
A bold, dry wine with a full body, and it presents aromas of black currant, coffee beans and cigar box. This wine is complex and balanced with a round finish.
Vineyard Notes
These Cabernet Sauvignon grapes come from our estate vineyard (Mokelumne River AVA). This vineyard is the one that surrounds our tasting room and production facility. The vines are trained onto a VSP (vertical shoot position) trellis system. Pruning and shoot thinning were done to keep cluster counts in balance, leaves were pulled on the north side of the vine as the rows oriented east to west. Planted in 2014, Clone 7 (101 Concannon).
Winemaker Notes
Grapes were hand-picked in the morning and gently sorted and transferred to a temperature controlled stainless steel tank for a three day cold soak. Must was inoculated with yeast and fermentation was kept healthy with regular timed pump overs.
Aged in oak barrels, approximately 70% new, French oak barrels were used where the wine aged approximately 20 months. The composition of the wine is 94% Cabernet Sauvignon, 4% Petite Sirah, 2% Petit Verdot. All of these are from our Estate Grown vineyards.
