Vineyard Notes
This Chardonnay grows in a 1.5 acres area in the northeastern side of the estate property of Oak Farm. This vineyard is located in the Mokelumne River Sub AVA, it is farmed under Lodi Rules and has a sandy loam soil. This area is characterized with warm but breezy days followed by cool nights; this helps the grapes to reach the right ripeness and intensity of flavors while maintaining the right balance with the sugar level and the acidity.
Production Notes
The 2021 Estate Chardonnay was hand-harvested early in the morning and quickly whole cluster pressed to a temerpature controlled stainless steel tank. After two days, the juice was racked into a new tank and inoculated with yeast. The wine was fermented in tank before being transfered to 8% new French barrels and the rest in neutral oak barrels. Malolactic fermentation took place to help with the body and structure of this wine. This wine aged in neutral barrels for 10 months before being bottled.
