Oak Barrels (Approx 27% new - both French & American)
This deep garnet Cabernet Sauvignon is composed of complex aromas of black current, cedar, and vanilla. Full bodied with echoing aromas on the palate. The finish is abundant in textural tannins yet smooth and velvety.
These Cabernet Sauvignon grapes come from our estate vineyard (Mokelumne River AVA). This vineyard is the one that surrounds our tasting room and production facility. The vines are trained onto a VSP (vertical shoot position) trellis system. Pruning and shoot thinning were done to keep cluster counts in balance, leaves were pulled on the north side of the vine as the rows oriented east to west.
Grapes were hand-picked in the morning (approximately 26.5° Brix) and gently sorted and transferred to a temperature controlled stainless steel tank for a three day cold soak. Must was inoculated with yeast and fermentation was kept healthy with regular timed pump overs. Aged in oak barrels, approximately 27% new. Both American & French oak barrels were used. Other varietals blended in are Petit Verdot (2.8%) and Petite Sirah (1.2%).
